Is it easy to cut meat with enoking's butcher's knife? Chicken?

This knife cuts anything that you put under it. Very sharp, great weight. Little challenging if the meat is longer than the blade. Works great though.

Is this knife suitable for cutting bones? would this be a good knife for breaking down a wholechicken?

Yes. I wouldn't use it for large beef or pork bones, but I HAVE used it to break down a whole fryer... just make sure to remove, and oil it afterwards

Clad steel is an industrial composite with different types of metals. High carbon steel is steel that has a high carbon percentage relative to mild steel. Steel such as 80CRV2 or 52100 is excellent high carbon knife steels used by master bladesmiths. "clad steel" in this use is a marketing gimic.
