Q: Does this kit come with the 2 leads required to connect one unit to the modem and the other unit to the wifi appliance in another part of the house?

Yes but the cables are not POE compatible (only have x4 cores). So you will need your own cables. I used the kit for CCTV. Once I used my own cables it worked well

Q: Can I use three of these in seperate rooms?

Yes you can. We currently have 4 in operation provided data points in our house.We take a feed from the broadband router into one TP link. A second TP links feeds into a desktop computer, a third into our Sky box to enable on-line services/catch-up TV etc and a fourth into a laptop.

Q: Would I need 2 cat6 Ethernet cables or would it be okay for 1 cat6 cable to hookup to my pc

You would only need cat 5 ethernet cables, as regardless of the advertised speed, it doesn't have a gigabit ethernet port, so the top speed possible from these are 100mbps, which will go down to 95 or 90 through the loss from going through power cables. Even the tp link 1000 series, only got me speeds of around 150 from a 500 mbps connection. The takeaway here is if you want over 100mbs, you need a unit with a gigabit ethernet port, (then yes, you would need cat 5.a or cat 6 ethernet cables) anything else is going to give you under 100.

Q: Would this extend the wifi signal as well?

Well, if you plug-in a wifi range extender in it maybe. This is a "wired" network link.
