Can these be flipped over and used as trays?

Sure, but not very attractively. I can think of better things to use as trays. Its just four pieces of wood around the back. Expensive for a tray. Just buy a TRAY.

You could but be aware the thickness of the wood on the front is thin. So it would depend on the nails and how tight you have the string.
