has anyone used this in the car? would it work for a long car ride?

They are actually pretty study, we have two and love them for all sorts of activities, although ive never used it in the car, i could see it fitting right over my childs lap in the car

6 inches. Yes it fits over the child's legs.

Could this possibly work with a forward-facing car seat?

No. It would not fit over the car seat. Or sit level. I was not happy with the quality of this product. The pins came loose and it was quickly bent out of shape.

Do the legs lock once they are open so my daughter cant close or pinch her fingers?

No they don't have a locking mechanism on them. I bought these for my 3 year old granddaughter and she has no problems. She loves it.
