My go to for making pasta... Mix 100g flour with 1 egg and kneed well then leave to rest in the fridge. Lovely stretch and bite, better than anything else I have used. Absorbs a good amount of water and seals well too when blanched for 2 minutes, so excellent for prepping in advance and keeping chilled until service...
