Is is possible and safe to use 2 pairs of these to get all 4 wheels off the ground?

The problem would be driving the car onto them, two ramps would have to go under the sills, you may have to drive the car onto the front ramps and jack up the rear to place the ramps under the rear wheels. If that's the case you would be better with two jack stands for the rear. Hope this helps you.

Do the the v2's give the same lift as the standards?

Used a friend's def version and when these compared to those, I would say they are pretty much identical.

Does anyone have a car such as LOW suspension BMW? Is it high enough? I need a ramp that gets high enough so I can do an oil change every 3,000 miles.

I would say it depends if your car is lowered or not? I drive a Lexus IS250 2008 on coilovers and it's fine for me. I've changed oil and refilled differential with no issues with a 2 inch drop. Hope that helps?
