Naturally occurring sesame oil has a strong flavour. A sweetener is added to stabilize the flavour for cooking all kinds of dishes. Palm jaggery is added as a healthy alternative instead of the usual sugar syrups added by most makers. We add 1kg of Palm Jaggery to every 17kgs of Black sesame seeds. It has 0% trans-fat as the oil is extracted without refining (hydrogenation) in traditional wood and stone mills. Palm jaggery's glycemic index score is 41 (Compared to 63 of table sugar), which makes it appropriate for diabetics too. However, it should be consumed in moderation as it is high in sugar.
