Q: I though guar gum doesn’t need to be heated to work in ice cream. i am making no cook ice cream, will this work or should i just buy plain guar gum?

Perfect Ice Cream has to be heated up to 180 and will not work in a no cook ice cream

Q: how much stabilizer is required fon quart of ice cream?

It depends on how sugar you use. The sugar makes it soft. Stabilizer makes it not form ice crystals. We use almond creamer and 1/4 tsp stabilizer.

Q: Do i need to add the .5% of the recipe to the whole recipe to hydrate it? or can i add it to the milk only so i shouldn't need to heat up the cream?

Perfect Ice Cream should be dry blended with the sugar and incorporated into the recipe as normal. This product requires heating for hydration.
