Ceylon cinnamon is generally thinner rolls with more layers, with a weaker aroma and taste, but also a somewhat different flavor. More importantly it has dramatically lower levels of coumarin, so is safer to eat in larger quantities. I've tried a few brands of Ceylon cinnamon and so far, this has been the freshest with the strongest odor/flavor (though still less than Cassia, of course).

The cinnamon sticks are excellent

I pour hot water on these and drink them. They taste much better than the Cassia ones, and are much healthier for drinking than Cassia.
