Great knife! Better than Dexter basics.
This knife comes hair popping sharp out of the box! I noticed there are options on the buying page so this is for the m22206. This 6” narrow boning knife is nicely flexible making it a good fillet knife as well. Cannot beat the value. Had dexter knives in the past that were awesome, bought a couple of the dexter basic knives at same time I bought this since they were close to the same price point and the quality of this Mercer blade is night and day better than the dexter. If you want a knife that won’t cut you out of the package, don’t buy this one and choose the dexter instead.

Perfect balance and blade thickness.
This by far the best go-to knife that I have ever owned for kitchen use. Too early for an edge holding evaluation but it's almost irrelevant. I love this slicing, dicing and meat cutting tool.Update:This knife blade has developed serious deterioration of the blade edge in a few weeks of ordinary kitchen use. Very poor quality steel that will be unusable in a year

Solid No-Nonsense Affordable Knives
I bought five sizes of various Mercer Culinary knives last year and I am very happy with them. They won't win any knife beauty pageants, but they do great for everyday kitchen work. All of my knives have held up very well, but if I do have a problem I know that a replacement isn't going to break the bank. The only drawback I can see is that handles of some of the larger knives are a little big for small hands. My wife likes the small knives just fine, but she says that the chef's knife is a bit unwieldly for her (but I don't fault the design of the knives for that).

Love my Mercer knives
Received a Mercer Chef knife for Christmas and loved it.... I've since bought the de-boning knife and a 14" slicer. They stay sharp and can handle anything we've put them to.

Arrived bent like a boomarang. Not quality steel.
Boning knife showed up bent like a boomarang due to poor packaging during shipping. Quality blade steel can be flexible, but it shouldn't deform like this. The knife was inexpensive and so you shouldn't be surprised that the blade is cheap.

Decent knive for some applications
For the price, this is a decent knife. However, it lacks the flexibility to do some tasks. If all you need is a boning knife for chicken, this is a good value. If you need to filet fish, you will want something thinner with a more flexible blade.
