I want to make tempura batter with it, is it fine enough for this, I want proper flour texture, I don't want just ground almonds.

Hi It is very fine! We have used it to make pancakes successfully, however it does not ‘bind’ as well as wheat flour, so not sure if it would stick to food as a batter!! Not sure if that helps or not!! Best regards Bob

Just got it today the nutritional value is totally different it says 21g carbs per 100g of the flour out of which sugar 8.9 is it ok for keto?

It's funny that you ask. I have always used almond flour for my keto recipes. Any keto or low carb recipes that are given online use almond flour as well. Plain almonds are normally 8 to 10g of net carbs per 100. So I just looked at my packets of almond flour. I have 2 sorts, the Kirlland American one and a German one. They both say 21g of carbs and 9.2g of fiber. When they talk about 'net carbs', they get that by deducting the fiber. When you do that it gets nearer to a reasonable value at 12 but not as low as 8 or 10. These counts are possibly not that accurate. Plus it is much easier to use and replace other flours wth an acceptable taste. Coconut flour is more absorbant - like normal flour. But it has a stronger taste which I personally don't like as much. So I would say Yes - it is suitable for keto. Just count them in your carb allowance - whatever you want it to be.

Can you use this to make bagels?

For sure, never used it for bagels but made bread with it :)

Can you use this instead of normal ground almonds eg for macaroons?

I would think so. I’ve not made macaroons before, but the texture of this is much closer to regular wheat flour than ground almond meal I’ve found locally.
