Vegetable Soup Review
I purchased this item over a month ago and have used it several different ways, mostly as a soup or as a mixed vegetable side dish. I am writing this mindful of the negative and positive reviews this product has elicited. First and foremost, this is my first purchase of the Harmony House products First the Cons: 1. The product is titled "Dehydrated Vegetable Soup". Though when I opened the product, it did indeed possess a very pleasant aromatic aroma.. it was not a dehydrated soup. It is dehydrated vegetables that can be easily used with your favorite soup recipe.. In all fairness, Harmony House should make this clear on their label. 2.. The vegetables are in a raw or near raw state as far as I could tell. That is OK with me, but I can see where some might believe that you just add water to re-hydrate and boom, you are ready to go. I actually did this and vegetables crunched like they were raw... Again, not a problem for me, but for some, I can see where they may have been surprised. This is something Harmony House can easily correct with their labeling and product descriptions on Amazon. 3. The product did not come with a re-hydration chart. An oversight perhaps? One can be obtained from the Harmony House website. Now for the Pros: 1. Harmony House added plenty of aromatic vegetables to the Soup Mix. 2. Packaging is excellent 3. Once re-hydrated and cooked to my satisfaction (simmered for 15 minutes), the vegetables had a good flavor and texture. 4. I used these vegetables as sides dishes and in soups that met or exceeded my expectations. 5. Very little or no waste when using these dehydrated vegetables. Measure out what you want and you're done. 7. The product seems to maintain its freshness for quite a while. After opening, I have mine stored in the original container with no issues. 8. Campers and backpackers can easily create their own food kits so they won't deprive themselves of their daily vegetables. 9. Excellent product for people with busy schedules. All in all I am quite satisfied with Vegetable Soup Mix and will purchase again and try some of their other products as well. I am hoping that Harmony House or their re-sellers will do a better job of describing their products on Amazon's web pages.

Nice product, Very Versatile
I like to make my own soups and dips. I own a dehydrator and often dry my own veggies for those uses but honestly, it takes a LOT of fresh veggies and herbs to make the amount of a mix you get with this product! So I feel that it is a good value at $12.95. I like the fact that this product is pure vegetable and herb. No fillers, No MSG, no weird preservatives I can't pronounce. A silica preserving packet is included in the container. The caloric content is 58 calories per 1/4 cup dry product. 0 fat and cholesterol and only 49 mg of sodium per serving. Ingredients as listed in order on the label: Dehydrated carrots, Onion, tomatoes, peas, celery, green bell peppers, green beans and parsley. This makes a nice soup base with water but I prefer to use chicken or vegetable broth. I also like to reconstitute the mix and add it to whipped cream cheese or greek yogurt for a nice dip. I also reconstitute and add it to scrambled eggs! It is great added to your meatloaf or hamburger mixtures too. Some uses do call for it to be rehydrated but there are other uses that benefit from the crunchiness of the dehydrated form. Put some in your coffee grinder (I have one that is used exclusively for herb and spice grinding) for a powdery version. If you have a large pepper mill you can put it in there and grind a nice veggie seasoning on anything as you would with pepper! There are many uses for this product and I am enjoying getting creative with it. I recommend this vegetable "soup" mix. I wish they would rename it Vegetable "EVERYTHING" Mix.

Good, clean, & plenty!
We were looking for good clean, low-sodium, gluten-free, high-volume, reasonably priced soup mix. This meets all those needs. Only deducting a star because it could use some natural seasonings, but good currerntly as a blank canvas. Lots of veggies! TIPs... for some extra zing, I just added some garlic, onion powder, and basil to taste. And I diluted a can of beef stock with water (3:1) along with bone broth (one cup) for my base. Also, some cooking suggestions inside or on the package would be helpful. Many buyers are asking, "how long do you cook until the veggies soften, and what ratio do you add mix vs. water?" For me, 1\2 cup of mix to four parts liquid (stock/broth/water ratio above). Bring all to a boil, then reduce heat to a simmer covered for 30-45 minutes, stirring ocassionally (clue= you'll notice the mix stops floating). The veggies are tender at this point. But for those that like them much more tender, falling apart...just simmer covered another 30min, then just turn off and let soup marinate another 30 min. Hope these suggestiins help. Enjoy! Love that Harmony House Foods is made in USA, in the beautiful NC mountains too! One of my favorite places. I recommend highly!

Such a great idea for dorm room food!
Ok, I did a search on Amazon for vegetarian instant soup mix to send to my college vegetarian daughter and thank goodness this popped up! I sent her these and the dried shiitake mushrooms and she absolutely loves them! She puts these veggies in all kinds of things and it makes it SO easy for her t use in her simple dorm room setup. Definitely worth the cost since you don't use that much for each serving and it's lasted her over a month so far. It's hard to gauge by the weight since they are very light dried veggies so I couldn't tell if it was worth it or not. She uses it in her ramen (she can't use the seasoning packets since they're not vegetarian) and a little Italian seasoning and it turns it into a complete meal! She puts a little of the mushrooms and veggies in with plain pasta that she cooks in her Breville water/tea kettle and can make soup too when she was feeling under the weather and it was so much better than instant soup mix packets you get. She puts some of both in instant mashed potatoes and even with plain noodles. I'll definitely keep buying these and sending to her on prime. So happy I accidentally found this searching through on Amazon.

Harmony House Foods offers this Dried Vegetable Mix to Add Into Many Dishes.
The Harmony House Foods Soup Mix, Dried Vegetables mix comes in quart size and though that doesn't sound like a lot, it's packed in the plastic are and there is a wonderful flavor to the combination of vegetables in the container. I have been using the vegetables for tossinging into soups, both home-made and canned (to bulk up my vegetable count and to enhance the flavors of the dishes. I also use a handful of the veggies in pastas (a kind of vegetable prima vera and add whatever spices and/or sauces. They all complijment the dish and add fresh tastes to them. I have gone to the Harmony House products that are sold by Amazon and noticed all of their other products shown and there is a lot of other single and multiple vegetables, herbs, seasonings, and fruit combinations that they offer. I will continue to use this Soup mix, dried vegetables wherever I think the product will shine and share and add other Harmony house products to my pantry. I am very glad to know they are out there for a good flavored dose of many possible purposes in my meals. They have a very fresh tasting flavor and a good variety of mixed vegetables and such. I truly enjoy their flavors and they will be purchased again by myself . This was a wonderful purchase I made and I have gotten very good use out of it. Give it a try, and check out the other products they offer.

No instructions came with it
I had to come up with own water/product solution and add spices for cups of soup. Takes a long time to hydrate, could use it camping if not in a hurry

Great as "Soup Greens"
I have been looking for "soup greens" but could only find them in smaller containers. I'm new to this concept but found that you could take these and add them to an existing soup to bulk it up. You don't have to make it into it's own soup but can add them to other soups and stews for flavor. This works really well. It also works to make a quick dish if you use these, some "Better than Bullion" paste and some meat like chicken or beef. Adding egg noodles is optional. It's so flavorful I don't even need to add spices or salt and pepper which surprised me. The veggies rehydrate when put in water (I use a crock pot) and for me it's so much more convenient to have this on hand then to worry about whether or not I have fresh veggies in the house at a moment's notice. It also saves on prep time if you are in a hurry because you just toss them in and don't have to clean and chop like you do with fresh vegetables. I find that the taste is as good or better than fresh, again a surprise.

Cook quickly
The vegetables are cut very small but once hydrated they are the right size for soups and stews. On first sight they appear expensive but in use they are not because you use less than more chunky cut vegetables and more is packed (tightly) into the jar. Good value. The taste is just as fresh vegetables. I shall buy again.
