Superior product, excellent steel quality
Packed professionally and aesthetically very pleasing. Ebony handle is beautiful, blade forged, polished and sharpened to perfection. Ebony handle and the Aogami blue#2 steel (clad in stainless steel) blade are balanced perfectly. The blade is razor sharp right out of the box. Great knife. Takes a ridiculous edge if sharpened properly
Great knife. Takes a ridiculous edge if sharpened properly. It's beautiful to look at and seems pretty durable too. If you don't like upkeep this knife may be a problem as the metal isn't stainless and will rust and stain. That said, I think the upkeep is part of the appeal. Love this knife and it's a great price for value

excellent value and knife
I am a professional chef and typically have used German knives but wanted to give Japanese knives a shot. This knife is razor sharp and comfortable to hold. I am very pleased with my purchase so far. I ordered the knife Saturday morning and by Monday afternoon it made it all the way to my door on the east coast. This is not a Western knife and it is not meant to be beat on, cut through bone or hard seeds and requires a bit more care then a German knife would but the result is worth it. I would definitely recommend this knife to anyone looking for a quality high carbon steel chef knife.

Sharpest knife I've ever used
I'm not really a knife aficionado. So, what I though was sharp in the past is nothing compared to what I got with this beautiful blade. Previously the sharpest knives I had would cut through onions, broccoli and other semi-hard vegetables with a "shhh-k" sound (with the 'k' sound being the blade hitting the cutting board). Last night, I cut up broccoli, onion, and garlic and this thing went through the broccoli silently like it was butter, sliced through the skin of the onion like it wasn't even there, and sliced up the garlic faster thinner and easier than anything I've ever used before. With my old knives, there was always a bit of resistance to the blade passing through what ever I was cutting. With this, allowing the knife's sharpness to work for me is a no-brainer. It ~wants~ to cut. It's almost like it pulls itself through the cut for you.I'll be coming back for a matching petty knife, and carving knife if one ever becomes available...

Beautiful Japanese Chef's Knife
I own quite a collection of knifes including Shun, Whsthof, etc. IMO this knife is as good (better?) than any I own and the price is reasonable. I love the handle and the fit is great for the pinch-grip. It seems to hold its edge nicely but I have not yet had long enough where I need to sharpen/re-edge so I cannot rate it fairly on that front. However, given my experience I don't expect any missed expectations here. Definitely recommend this knife.

Amazing Knife!
This knife arrived in a nice carrying box with protective foam and padding all around for safe shipping. Shipped fast as always from Yoshihiro. The blade is rustic styled, and the kuro uchi finish is great. Came properly sharpened. The bolster is top notch and the handle is beautiful and finished. Fits great in my large hands and can knock through almost any task I lay on it. The maintenance required for this type of knife just adds to the appreciation of amazing craftsmanship most people overlook today when buying cutlery. As with all my Yoshihiro collection, this one impresses all and myself daily.

3 for 3 for Yoshihiro!
I have purchased 3 yoshihiro knives so far and all of them are very comfortable and hold there edges much longer than any other knives I've owned... When I recently ordered through amazon I was supposed to receive my package on December 3 and got it November 24 so I was very surprised and very satisfied by the quickness of the delivery and the quality of the product from Yoshihiro. I will definitely continue to buy Yoshihiro knives for there continued great service and great versatile knives.

HiI've worked as a chef for 17 years and i tell ya, this is a great knife for the price.Love my new knife. The shipping was fast and it came when they told me it would.IT also came with a very easy to read instructions on how to use and,clean and maintain it, really helpful.The only bad thing is that the handle was for a righty when it says it a chef knife. Chef knives are usually 50-50. it didn't say anything about that part. Im a lefty, but actually it doesn't bother me at all.Ill prob get some more knives from these guys.
