Fantastic bread flour

Game Changer
This is amazing flour for Neopolitan pizza. I've used it from 550F-1000F in a variety of ovens with great results from them all. If cloudy, crispy bubbly crust is your thing, this is the flour for you.

Exceptional Flour for Home Pizza Ovens
I’ve been using Caputo ‘00’ Pizzeria flour for the last year with great success at 60% hydration. But when I learned of Caputo Nuvola I decided to try it. I found that it just may be the best choice for home pizza ovens that heat to 550°F. It has the rise of a lower protein flour with the bite of a bread flour and darkens impressively in a home oven. The pizza pictured was prepared at 65% hydration and cooked on a baking steel. I highly recommend it for taste, bite and attractive results. The only negative is the absurd price which I sure hope comes down dramatically and quickly as more and more people order/use it.

Ormai utilizzo questa farina in questo formato da quando è scoppiato il covid e tutti gli italiani si sono trasformati in piazzaioli e panettieri! Confermo il giudizio più che positivo. Ci faccio di tutto dalla pizza alle crostate, dal casatiello al tarte tatin, dalla crema pasticcera alla crema frangipane. Ve ne consiglio l'acquisto anche in questo formato da 25 chili per non restare mai senza. In merito alla durata del prodotto, considerate, ad ogni modo, che ne utilizzo kg 1.2/1.5 a settimana sia durante i mesi invernali che estivi e non ho mai avuto problemi di farfalline.
