They look oily as a whole bean and grind well. The coffee is dark with a great flavor.

Great coffee! But 2 lbs. lasts me nearly 2 months. Will it stay fresh-tasting if I fold the top of the bag over and use a clip to hold it tight?

We have been folding and storing in the pantry and I haven't noticed any significant decrease in freshness. It has been opened close to two months. Perhaps storing in the fridge may increase time of freshness.

can i make espresso shots with this coffee?

Yes you can, this is the strongest coffee roast I have ever tried, so beware,, I'd did give to a friend who likes it strong and he told me that one shot keep him going all day
