Is this good for shabbat?

Yes! Very good. Been using it like that for years now. It does not get super hot like the cheap foreign made ones sold in some stores. This is much safer. I would strongly reccomend you buy a timer and don't leave it on all of shabbos. That's not safe at all.

can I select the temperature?

No, it heats to a certain temperature and remains at that temperature for approximately 2 hrs. after unpluging

Does this contain ptfe, pfoa, or any form of teflon?

Salton Hotray model TWT30 has a stainless steel surface. This product contains no PTFE, PFOA, or Teflon.

Can you put ceramic, glass, stoneware, etc platters on this, or does it get too hot? Do you need to only use oven-safe things like pyrex and metal?

Always use oven-safe or heat-proof dishes, containers or crockery with Salton Hotray model TWT30.
