Can you roast coffee with this?

Yes! It works great. I use this on a Coleman campstove. Takes about 12-15 mins for. medium to high heat

Any thoughts on using this as a panning machine to coat balls of chocolate with candy coating? All those panning machines are so expensive.

I've never tried using it for that but it's worth a try to find out. No different than using a regular kettle and spoon.

How does this new model, vkp1225 differ from the previous model vkp1215?

The VKP1215 the pan is made of anodized aluminum, the VKP1225 the pan has a high temperature scratch resistant coating inside and out.
