Will this work on a New Zealand PS3?

Yes. PS3 games are not region specific (unlike DVD's Blu Ray, etc). Only games that are played online will require a regional code for the servers but Skylanders is not an online game. It'll work for any PS3, anywhere in the world.

Do I need to buy a separate remote to play this on ps3 or does the standard PS3 remote works?

You can get an iPad version but I don't think there is an iPhone version.

My son has a wii u and my question is will his skylanders gaming portals work with the playstation 3?

I think the portals r different, you can check under the portal they usually have a sticker. You can also check with any GameStop store.
