Its 1300 watts, even a quad sli and all the above would be covered. I think the Large Pixel Collider that PC Mag built with 4 Titans only had a 1250 watt psu. You'll be just fine.

I haven't noticed it over my other case fans (3 for the case and 2 for the H100 cpu cooler). But looking at a review over at TechPowerUp they had the it maxing out at about 55db. I'm upgrading PSUs, would I have to change the cables also or could I just swap the PSU itself and keep the same cables connected?

Please DO NOT use older PSU cables even if your using the same PSU brand and the pins are the same. If you are upgrading from a lower wattage to a newer wattage PSU the guage of the copper in the wires are different. I went from a 850w EVGA to a 1300w EVGA and the cables seemed thicker and beefier than the old ones. They have their guage on the wires and the new ones were indeed a higher guage. This let's more electricity through the wire safely. If you push to much electricity through the weaker wires you risk causing a fire!

Will this PSU fit in a NZXT SWITCH 810 White Full Tower Case?

It should. I put it in an InWin Ironclad full tower with no problem. If you can get an 850 watt power supply to fit this one will fit. It is not physically larger than other power supplies. I just looked up your case and I am confident this will fit.
