The height of the bag is 11.5", but the end is sealed so you need to keep that in mind. The bag is 7.5 ". I freeze boneless chicken breast and a good size meal fits in the bag.

What thickness (.mil) are these bags?

I purchased quart size bags. The box reads "Quart Size (950 ml). It doesn't show anywhere on the box the thickness of the bag unless that is the (950 ml).

what is the difference between these and the gamesaver quart bags?

There is no difference in the bags. It is just the packaging that makes them appear different.

Is it better to order the bags or order the roll and make your own bags?

I've used it both ways with a newer and higher end model of the foodsaver vacuum machine. If I'm vacuuming something other than food I usually use the roll and make my own bag. For food I use the pre-made bags like these because as others have stated they do work better. If you are using the roll I recommend sealing the end that you're not vacuum packing several times a fraction of an inch away from the previous seal, similar to how the pre-cut bags are sealed. They hold better that way.
