Would it power up a projector

You have to specify what the current draw is for your projector. If it draws more than 3 amps at 12 volts, no. In fact, I would suggest limiting it to 2.5 amps.

Will this work with the irig pro? all specs seem to fit but i’m wondering about the barrel plug...

Only you can answer that question. The plug will fit 5.5x2.5mm connector pins. If the device you wish to power has this connector size and the power supply meets all other specs, it should work. The unit also comes with an adapter that allows you to cut the tip off the the old power adapter of the unit you wish to power and connect those wires to the adapter. Basically, if the 5.5x2.5mm barrel is not an exact fit, connect the barrel tip you were using to this adapter.
