are the valves all brass or do they have plastic on them?

All brass and the knobs that go with them are very heavy duty nice finish. If you dropped one from 10 feet and it hit someone in the head I think they would die. Lol there is plastic protection sleeves on them for shipping that get thrown out. I don't buy crap so if someone got a faulty valve I would say it was a fluke or user error especially 6x come on. Really?

My tub and shower has the old fashioned bathroom inch and half thick tile walls. Are the stems long enough to mount the knobs?

YES! in fact same here. installs easily and you may have to buy new knobs due to the length of stems!

Can this be used to divert water between two shower heads?

As I understand it, the middle handle diverts water one way or the other. What is on the end is your choice: shower head, tub spout or handheld shower, so two shower heads should work fine.
