Q: Can I use ink stamps?

I'm sure you can. Its outer layer is matte kraft paper. The seal won't be blurred or erased. The inner layer is waterproof.

Q: how many oz does it hold

They are pretty tiny, I can get about 35 grams of coffee beans in it. So maybe 1.5 ounces? I primarily use them for sample size bags or if I need to pack a single serving of beans.
