I wouldn't think this would work well in baking. U must mix up with water first, don't use it in it's dry form. too concentrated.

Q: Is this harvested from a region that was not effected from the nuclear disaster?

These leaves are harvested in Kagoshima Japan. Pretty far away from Fukushima. Opposite side of Japan, on a separate island.

Q: Can someone tell me the difference between all the DoMatch's?

Basically it comes down to grade and organics. They offer an organic and non-organic version of each type of matcha. Ceremonial grade is the highest grade of matcha you will find online and is best reserved for traditional Japanese tea ceremony(basically whisked into hot water.) The 2nd Harvest is a bit of a "dirtier" grade but is still very high quality, in fact I find their organic 2nd Harvest is better quality than a lot of "ceremonial grades" of other brands.

Q: I have previously bought DoMatcha's ceremonial matcha. how does the taste compare? Is it worth buying the summer harvest since its less expensive?

The summer harvest has a rich and creamy texture. Comparable to the ceremonial. I did find that the difference is in the sifting before pour. The summer harvest is slightly more lumpy and sticky. Other than the processing it's taste is as satisfying as the ceremonial matcha.
