I generally sit in my recliner chair to read my Kindle and use a pillow to prop it up. Is the height of product adequate to read book?

Yes it is, I've used it while sitting in a chair, on the sofa and also while lying down in bed. It was good in all three places. It was also good holding a Stephen King book which over a thousand pages long and also a smaller book. I hope this helps.

Can this be used when lying in bed with hard cover and paperback books?

Yes, it can. It's very comfortable to use while lying in bed, even lying on your side. Both hard cover and paper backs fit very well, and the plastic thing to hold the pages in place is effective.

Which color is easiest on the eyes while reading?
