Interesting spice!
Bought this after visiting an Asian restaurant and ordering Dan Dan noodles. They come as whole peppers so be sure to mill it before using! I thought i could cook with the whole peppers and eating my food felt like a battle. I enjoy the numbing spiciness but definitely in moderation.

This is the real thing, numbing effect
This is the real deal. I've never used these before in asian cooking so I made a mistake by using too much. If you are after that numbing effect this will do it for you. Just keep in mind it has a strong flowerly/floral type scent and flavor. Be sure not to use too much and also take it back out of the oil after frying otherwise if you bite into one of these it will throw off the whole dish. I basically ruined my szechuan stir-fry by using too much. Everytime I would bite into one of these I would just taste a strong flowerly flavor. I have never tasted this in any asian dish I've had or in any szechuan dish. I guess the idea is to be subtle and to remove it out from the oil. DO NOT LEAVE these in your dish. It will ruin the dish.

Boy howdy!
Mercy. This is the most potent batch of these I have ever found. Usually buy them locally, but was not where that would be easy. I have had batches that required a double dose... and some that were just fine. This particular batch/brand just about did me in when I used my standard 2Tbs in a pot of Mapo-Tofu (about 4 servings - pound of tofu, plus meat or mushroom and extras). I deep fry 1Tbs to flavor the oil and the other I dry roast & grind to sprinkle on top. I was numb for about half an hour. Next time we will cut back a bit! Excellent.

Used these for a simple syrup in a rye tai cocktail. Nice potent, fruity numbing peppery goodness. Satisfied with the value and quality of these.

I am somewhat obsessed with Sichuan peppercorn and that numbing effect on the tongue. This bag of peppercorns delivered, and now I am set for a while.

To make this properly simply: pick out black "bulbs" (round things) and any notable stems -> get a pan up to heat (med-high) -> roast until they smell fragrant and/or get moist looking -> grind in a mortar and pedestal -> sift through a fine sifter/tea leaf holder/strainer -> sprinkle on. To make these improperly (LOL): chew them until your mouth is numb & spit out the debris left in your mouth Great price per gram!

I love black pepper with a good nose, but this is too pungent for most foods and I would guess be more appropriate for the Asian dishes described.
