Short answer - NO, since the larger ones are too coarse. to sharpen knives, you need a honing stone/wet stone, which is very fine.

Will these larger files sharpen thick edges on my axes, hatchets, bowie knives?

Yes, I would suggest a sander or grinder to get the bulk of material off first. Have been using these files and I'm satisfied.
