Question 1

Why do the instructions say not to use these pans on Medium-High or High heat settings?  Isn't that completely ridiculous and unrealistic?

From experience, I can tell you that foods in modern non-stick pans can brown and sear effectively on medium heat, and that foods that cook best on medium heat in iron pans and the like will cook effectively on low heat. Just use high heat for a couple of minutes to get it up to temperature and then turn it down.

Question 2

How deep is this pan.  How deep in inches from the top of the sides (without the lid) to the inside bottom of the pan.  Thanks.

This pan is 2 1/2 inches deep. Iv'e been using it for months and love it. It has worked great for everything I've used it for except frying eggs and that's because I steam then instead of turning them over. There's too much air for the eggs to steam well, so I use an old shallow pan for that. I see some of the  other answers say it's only 1 3/4 " deep, but I measured mine and it's 2 1/2.

Question 3

How does it hold up after a few months of use?  How about after a year?  I'm tired of no-stick pans that give up after two months.

My first one needed to be replaced at about 6 years. We used it all the time, but I was careful to never use metal in it, not too high a heat and I always hand washed it. T-Fal makes the best all around non-stick fry pan; and 12.5 inches… what a wonderful size!! This is our go-to pan for sure.

Question 4

Is this pan heavy? i recently bought another pa this size locally and it's so heavy, takes 2 hands to carry it to the sink!

The 12" is heavy. It's nice to see they finally came out with one with a grip on the handles. The old metal ones are a bear if you have arthritis. Now, if they would re-engineer the top so it doesn't accumulate water around the edges that pours out all over the stove top when you lift the lid.....
