I used this to make cheese sauce with milk, cheddar cheese, and a little bit of crushed red pepper flakes. It worked well, creating a silky texture for the cheese. Very easy to use, simply add a small amount, depending on the size of your batch. A little goes a long way, start with a little and see if you need more. It does not seem to affect the taste of the cheese sauce very much, which I find to be a good thing. Because a little goes a long way the size of this package should last most home users for a long time.Seemed like a good value compared to the others I have looked at. An excellent emulsifier.

Great Product! I use it for many different uses

Love this, it has really kicked up my mac-n-cheese game.

I use this primarily for making a smooth mac and cheese sauce. It’s especially good if you’re into making low calorie cheese sauces as fat free and low fat cheese don’t really melt well, and by using sodium citrate, I don’t have to make a roux with flour and butter or add in anything extra to make the cheese sauce smooth and not grainy.The sodium citrate isn’t extremely fine, but it dissolves easily regardless, and having the bag resealable is always a bonus. I’ve opened and closed the bag dozens of times now, and so far, the ziplock hasn’t broken.

A little too smooth for my taste. I ended up with a Velveeta-like texture in a cheese sauce I made from an online recipe using sodium citrate. I'll try it again next time I make a fondue, probably with less of this ingredient than recipes call for.

Bag is too thin, got a couple of holes in it and leaked everywhere.
