Are these the shirts with the grey band on the collar? Or is the picture wrong?

The grey band is on the inner part of the shirt, not on the outter collar. The picture is accurate.

Do these shirts "pill" after washing and drying a bunch of times because they are not all cotton?

Been wearing them for along time and have had absolutely zero problem with them pilling, but then again I don't wash mine... just kidding. I have seriously not had any issue pilling. I love them.

Do the arms hang out / stick out when wearing under normal t-shirts, or are the sleeves short enough?

I am not sure. I only use t-shirts as an undershirt when I wear my long sleeve dress shirts for work.
