Is this too young for an 8 year old?

I think that an 8-year old could put this together with some assistance. My son and I put it together. He is 8 years old, but cognitively around 6 years old due to handicap. He was able to do a lot of the work, but needed help and supervision along the way. He enjoyed the putting it together with me more than playing with the robot. 

I am a teacher. Will I be able to reuse this product by disassembling it or is it a one time use?

You can disassemble it, though you will need to be careful. The pieces are plastic and for the most part, snap into place.

Is it possible to program/code the robot to do more things? Is it controlled by a microcontroller?

No you can't program it to do more things
