Just like brown sugar, just "dialed down" a little.
Amazon wants to know what I think of this stuff, so here's my $.02.I like sweets, first let's get that straight. :) But if I pay attention, I see how sugar, at least the refined stuff, affects me with the sugar spike and crash routine. (I get instant energy--Whee!--but then soon after I am hungry and have to eat, or suffer through feeling sluggish and weak. Ugh.)None of that with this coconut sugar stuff. If I could compare the taste of a spoonful of this to a spoonful of granulated cane sugar (ordinary sugar), I would say that the sweetness doesn't seem so "high pitched" as the cane sugar does; there's no teeth-jarring happening here.But it is sweet; not in an "artificial" taste that some sweeteners might have, either. I think it tastes just like brown sugar, only dialed down a teensy bit.A couple teaspoons in my coffee tumbler (I like it sweet^_^) and I'm set, with no sugar boo-hoos later. Love it.On a side note, my humble cookie batter suggestion for how I've successfully been using this instead of brown sugar to bake cookies. I delete the white sugar from the recipe and use an equal amount (or a smidge less) of the coconut sugar instead of the brown sugar, and the results are just like a normal cookie made with brown sugar (less crispy, more chewy), delish. :)

I've bought these at least 3 times, it's a good product, but overpriced.
WAY overpriced, but it's an excellent product. If you happen to have a glycemic issuebut won't give up your morning coffees, this will help out in that respect.It's too expensive though, and there are at least 2 other options on Amazon for similar productone of which is 1/4 the price. (I had that one arrive today, and a 4 pack of these crystals arrive yesterday)I find that you need more than processed cane sugar, by volume, but one can get used to anything.If it's a health issue that you have, you won't be bothered by that. Health is most important.I've bought these several times, and am merely looking for comparable product at better pricing.These are great, but very expensive.

Diabetics, Listen Up!
If you are not using this product, you are missing out. I am diabetic and have tried so many other products that don't taste like sugar and leave a heavy aftertaste. It is the only sugar substitute I have found that tastes and acts like sugar. My wife uses it all the time in cooking and baking things for me that I would not be able to eat normally. I love it in my coffee in the morning.It has a low GI of 31 and does not adversely affect my blood sugar levels. I know it is expensive, but it is worth it to me just to be able to taste sweets again.

Throw Out Your Sugar and Sugar Substitutes!
This is a best kept secret that should be shouted from the rooftops for any cook or anyone concerned about their nutrition or glycemic index. The molasses flavor of the coconut sap crystal is remarkable and adds a richness to coffee and tea with no hint of coconut! I have used this in place of white sugar or sugar in the raw which I thought was unrefined but realize now is refined with molasses added in. The body recognizes this as a whole food and metabolizes it as such. I am so glad a friend recommended it to me.

A delicious substitute for refined cane sugar
I found this coconut sugar to be a more acceptable form of sugar in that it tastes very similar to brown sugar, and it has not had all of its nutritional components stripped out of it by the refining process. Most of its natural vitamins and minerals remain intact. After having read much about the numerous nutritional benefits of coconut in all of its many forms, I discovered this delicious, more natural form of sugar. Though it is not non-caloric, I can at least feel better that it is most likely a more beneficial form of sugar. Nor is it made of dangerously harmful substances, as are many/most artificial sweeteners. Enjoy it in moderation, without worry.

great alternative to sugar!
This product seems to be everything that it says it is. However it does seem to have a little tiny bit of an aftertaste with it which is not very noticeable at all. I think it is an excellent product for people with diabetes who really have to watch their sugar intake.. it works excellent and drinks like coffee where. Where stevia really doesn't do very well.

The best tasting and safest sugar substitute, bar none!
I'm a life-long coffee lover. I prefer mine a little sweet, but I have high blood sugar and have been looking for a low-glycemic substitute that doesn't leave a cloying taste in my mouth and won't slowly kill me in the process. THIS IS IT!!! It's a bit pricey, but totally worth it for me!
