How does the salt hold up over time in such a big package? Does it retain its flakiness, or does it crumble down?

We've bought several of these over the past couple of years (we love this salt for cooking and finishing) and have found that it mostly stays intact in flakes except for the very bottom which becomes more like regular shaker salt. We usually transfer the salt into salt cells (kind of like this one but I like ours better: http://www.amazon.com/Totally-Bamboo-Salt-Box-Small/dp/B000O5EUFW) for cooking. I carry small containers of the salt in a jar in my purse as well as restaurant salt is now gross to me. The very bottom salt, when I get to it, usually goes into a soup or such since it doesn't matter if it's not flaked that way and it tends to be a bit saltier tasting so I don't prefer it straight on food. In a soup or such, I can adjust the salinity. I hope that helps!

Does it keep well? I think this would last me a year or two. I'm afraid it would get moist like many salts do.

MY 3.1 tub of Maldon salt has lasted "about that long". I keep it in my garage (in Texas). Probably would work just as well in the kitchen pantry. "I'm afraid it would get moist like many salts do." I personally don't understand that sentence (and I've been a pretty good cook for the last 50 years). It's salt, in a plastic tub - hence, not much of a chance of getting "moist" IMHO. Well, at least MY salt has been okay. Think you'd have the same good luck.
