Great knife at a great price. Best Value by Far
Don't waste your money on the big brand, big name, big money knife. If you think you need to spend $150-200 bucks to get a quality knife, think again. This is the ONE for slicing. Comes sharp out of the box and looks great next to my Shun Damascus Santoku knife and rivals my Miyabi Henckel Chef Knife. This is not damascus but looks just as nice and I figured I'm only slicing occasionally and my chef's knife and Santoku do all the heavy lifting. We cook tri-tip over red oak here on the Central Coast of California and love how this knife makes the perfect slices for a great Santa Maria Style tri-tip Sandwich. Looking forward to trying it out on a pellet smoked brisket. Nice product and I highly recommend. I use a Ken Onion Work Sharp knife sharpener so when the time comes for sharpening it will be a force to be reckoned with.

FANTASTIC knife!
I am going to give you a COMPLETELY honest review of the Kessaku Slicing Carving Knife - Samurai Series knife. This knife is a FANTASTIC value, quality, and deal at $45! I can say this, because I own a set of Henckels 5-Star PRO knives (and it's the "double man" series that you can see on the handle butts in my last photo which is the best quality that Henckels sells (for those of you who may not be familiar with this brand). Twenty-plus years ago, I paid $400 for the block with 4 starter knives and an additional $400 for a couple more knives to add to my set; however, I was not able to find the 12" Slicing Carving Knife in this brand to add to my set. After living sadly without this style of knife for so long, I finally decided to "splurge" and add one to my collection and was off searching on Amazon. Well, I stumbled across this gorgeous knife and thought I would give it a chance and purchased it knowing full-well that I could return it without a hassel if I was not completely satisfied. Well all I can say is that I was completely blown away by the QUALITY of this Kessaku Slicing Carving Knife - Samurai Series knife! The knife arrived in a gorgeous display box with a hidden magnetic closure, with a polishing clothe, and unexpected knife sheath/guard . It is such a beautiful, quality knife that I will probably continue to store it in the box inbetween uses. The handle is made of solid wood, the blade is 12" long, and the knife is 17" long from tip to butt. The knif even included a tip guard! Both the serious chef and the daily cook will appreciate how well the weight of this knife is distributed, making it easy to handle for being such a long knife. This company paid so much addition to detail that the Kessaku Slicing Carving Knife - Samurai Series TOTALLY rivals my Henckel knives, at a FRACTION of the cost of my Henckel knives! I viewed several other brands of similar Slicing Carving Knives on Amazon, most being more expensive than this one, and the majority of them did NOT include the sheath/cover and would require you to spend an additional $25-35 dollars to separately purchase a sheath/guard. For anyone starting or restarting out in living independently, I would truly recommend not just buying the Kessaku Slicing Carving Knife - Samurai Series knife but would recomeend buying the COMPLETE series of their knives! You will not be disappointed in this brand.

Great value for a knife you never knew you needed
I figured a chef's knife would be all I needed for carving larger meats. Then, I smoked a brisket and I couldn't make nice cuts across the entire width of the meat easily. So, I figured I'd get a carving knife. It's not something I use often, but when I do, it would be nice to have. I received the Shun knife as a gift and loved it, but I felt bad about it being so expensive for something I use infrequently. So, I returned it and got this knife (plus some others for the same total cost). This knife cuts very well. It's super sharp and the high quality craftsmanship is obvious. It comes in a gorgeous box and has a simple, yet effective knife guard. That's a very nice touch considering it's too long for the knife block. The longer length makes it easier to make super thin, even cuts of ham, turkey breasts or brisket. For the price, it's hard to beat!

Fine for a knockoff
Good and cheap. It's very sharp and holds it's edge. Has a decent finish for a lesser quality product. Feels like it should in the hand and performs well. The only hints of cheapness are in the finish. I don't like the pseudo-Damascus laser etching, and the handle, while very smooth, lacks the refined finish of the blade style it is copying. The material is acceptable.

Every household should have a quality carving knife like this one
If you never carved a piece of meat with a good knife then I would recommend getting this knife. I was truly impressed with how easily it carved a turkey and rib roast. Beautiful long uniformed slices, looked great on the platter. Price under $50 , you wont be disappointed.

Impressed with the quality
This Knife met and exceeded my expectations. Shipped in a really nice magnetic box that i'm using as a case to store it in. also came with a really nice sheath for the blade that i'm not using. The knife itself looks like it belongs in a museum. seriously, this thing is beautiful. and it cuts exceptionally well. no sticking to the blade and came with a razor sharp edge. I've sharpened once since getting it and using for a while, and it is definelty a high carbon steel. Takes an edge very well and holds it for a long time. I don't review many products, but this one deserves 5 stars and high praise. dump the other ones from your shopping cart and buy this one. plus it says samurai and looks like a sword, so... I mean... come on... how cool is that?

Beautiful Craftsmanship with Excellent Quality
I bought the Dynasty series first for slicing brisket primarily. I liked it so much that I have to try the Samurai series later, along with the boning knife. The Samurai series is noticeably slightly lighter than the Dynasty series but both are razor sharp. They are perfectly balanced and very comfortable to use. The quality, although made in China, is excellent! The box containers that they came with are beautiful to look at, both inside and out, with that museum type display quality. I was so impressed, by the beauty of the packaging, that I've decided to keep both the carving and boning knives for display. Someday, hopefully, now that some companies are moving out of China, that both series, Dynasty and Samurai, will be finally be made in Japan.

Perfect Carving Knife
Way back when, I had a job in high school as a meat carver at one of those chain all-you-can-eat buffet restaurants. In that role, I carved hundreds of pounds of meat with some very nice restaurant-supply grade carving knifes which had just the right combination of sharp edge, weight balance, and ability to shed cut meat without sticking to the blade. I was taught to cut the meat as thinly as possible to deliver the best tasting meat, provide great presentation, and also keep waste low. Those knifes were good but they were not very pretty with Spartan white plastic handles and thin, utilitarian blades. I’ve been eyeing this Kessaku knife for a over year as it had the exact same blade shape as I used to leverage as a pro carver-it’s very long, straight, thin enough to cut expertly, and has oval dimples along the blade to prevent meat from sticking. I finally decided that it must be mine, so I bought it despit it not being inexpensive. It met my expectations and more! I shouldn’t have waiting so long to buy it! It cuts meat like a dream. Its maiden voyage was on a sous vide brisket which I was able to cut extremely thin slices which enhanced the meat’s flavor. I had such great control over the blade that it came out almost like Arby’s roast beef slices, if I wanted it that thin. Perhaps even more beautiful is the knife itself. The blade is etched to look like an ancient samurai blade. The metal tang and end cap are heavy, look very rich, and are perfectly shaped. The wood handle is expertly shaped and finished. The weight is substantial yet feels perfect to maintain control of the blade. The balance is also perfect as it feels like an extension of your hand. I highly recommend this carving knife for its performance, build, and beauty. I don’t think that there is a better value for the price. It honestly looks, feels, and performs like a $100+ tool. I expect will serve me well and make me smile every time I pick it up over a lifetime. I expect that it will be a family heirloom.
