What are the Differences between them?

The Ultra cuffs are all metal, whereas the originals are aluminum covered in polymer. The Ultras don't flex like the originals do, so there's less chance of the ratchet bar being misaligned and not cycling through properly when applying them to someone's wrist. They're still larger than "normal" cuffs - Bianchi makes decent cuff cases for them, in the Patrol Tec and Accumold series. Size 2 for ASP chain cuffs, size 3 for ASP hinged cuffs.

Are theses yellow or black?

They're black....the indicator that lets you know they're double locked is yellow.

Whats the difference between 1 and 2 pawl

Two Pawl is a high security cuff that requires a special key. The One Pawl takes the standard, universal handcuff key.
