How do you open this table?

turn it on its side with the hinge side (red locking tab) to one side, grab the two indentations on the opposite edge to the hinge and pull apart. there is a single clip holding it shut that snaps around one of the legs, so just give it a tug and it will pop open. The red hinge is to lock it in place once it is open. As far as the silver tabs go to adjust the legs, as one person (older and with bad arthritis) I was able to do this by pushing in one silver tab at a time, putting some pressure on the end of the cross bar at the end of the leg to hold that silver tab from sliding back into place, then releasing the opposing silver tab which allowed the leg to slide out to the next set of holes. Rinse and repeat until the legs are the height you want. When you are doing this adjustment, flip the table over on to its top -- makes it easier. I too couldn't figure out how to get it to even open up at first, then when I did this, I saw the tension clip that holds the two halves together and know how it is kept folded.

What are the two heights of the folding table? What is the the surface like? i.e. Would I be able to write smoothly with a pencil flat on the table?

22", 29" and 36" height. The surface is textured, you would need to put something under your paper to get smooth lines.

Is this table long enough for beer pong?

No it's not. This table is only 48" long x 24" wide (4 feet x 2 feet). I think you would need an 8 foot (96") table for that. The width of 2 feet is fine but length I would say 8 feet.
