Little knife for quick work
Got this knife to work on eels, but now use it as my everyday, go-to blade. Slicing vegis, small blocked sashimi,makes the work quick and easy. And now I learn that there is a special eel knife - shorter handle, longer blade?And the markets which carried live eels no longer has them, its a holiday thing.

excellent little blade.
I needed a very precise utility knife for intricate garnish and delicate food prep. This knife does everything I need it to and more. Excellent steel, sharpens very nicely and easily (good for pro and novice sharpeners) Blade does require care, but well worth the small effort needed.
