Q: If the only ingredients are green tea and food coloring, what's wrong with just using regular green tea?

It is green tea. Green tea refers to the amount of processing, not the color. The package very clearly reads 'green tea.'

Q: Does this tea have that distinctive smoky flavor that is present in the teas from Thai restaurants?

It tastes just like the thai tea I've had at several restaurants. The flavor is complex, but I don't know if I would personally call it "smoky". If you steep it for a very long time (I boil it for 2ish minutes and then let it stand for 30 mins before straining) then it has, what I suppose could be seen as, a smoky flavor (but is really mostly an over-steeped taste, but that seems to be how it should be made and I love it).

Shredded leaves. What we do is use our automatic coffee pot as the brewer. Put filter in , then fill with one cup Thai teas to 8 cups of water. Brew. Put in pitcher in the frig. after cooling fill glass 1/2 way with ice, put 1/2 cup sweet cream then tea and enjoy

It’s dyed for sure but it also is pretty spiced. It makes you use a LOT of the tea leaves though to brew. If you’re making a whole pitcher it calls for over a cup of tea leaf
