This is a cookbook that is true to the cuisine of the Southwest, particularly of New Mexico and Arizona.

Excellent survey of Mexican food along the border
This is an an excellent cross section view of traditional Mexican cooking in an area about 300 miles north and south of the border.Each Mexican state has a different style of cooking, differences reflected in the states immediately north of the border. Arizona embraces Sonoran cooking. Isolated from the rest of the country by the Sierra Madre, Sonora is ranching country with a taste for a bit milder levels if heat.Chihuahuans life heat, and this branch of Mexucan frontier cooking extends up the Rio Grande valley to Albuquerque and Santa Fe, which in turn add their own variations due to high elevations and shorter growing seasons ... and an infusion of Pueblo influence. Tex Mex is a whole different world, along with California and Baja California.This is a very well researched scholarly volume. I 've made many of the dishes and they are all excellent.

Understands what Texans like!
Originally purchased this book because of a tortilla recipe. The elusive tortilla but the recipe in here was very good. The rest of the book is equally as good. Authentic to our region in the foods that we like to eat. I would highly recommend anyone who enjoys the southwestern with a heavy slant on Texans menu

So far so good
I've been wanting to learn how cook "Mexican" for a long time and since I've gone "authentic" for Japanese, Chineses, and Italian, I thought that looking for an "authentic" Mexican cookbook was the way to go. I discovered the hard way that what I wanted was SW American Mexican.It's actually very hard to find a border cookbook because most of them focus on a specific region so sometimes the flavor just wasn't right. By the time I found The Border Cookbook, I was a little jaded and almost passed it by. I'm glad I didn't as it's 'so far so good.'At worst, the Border Cookbook is an excellent read describing the movement of food and how certain flavors and styles cropped up. I was most surprised at the Oriental influence, but I guess I shouldn't have been. I've only made a few items, but those few won me over. Best of all, it's not limited to a specific location in the SW.

My favorite cookbook of border food.
This cookbook won a James Beard award for a good reason. Cheryl and Bill (RIP) Jamison wrote a slew of excellent cookbooks and taught at a cooking school in Sanya Fe. Food from this part of the country varies significantly by region; it's not fungible; this cookbook captures that. I have cookbooks from south Texas, from New Mexico, from Arizona, and from southern California. If I had to choose one, though, this would be the one.

This cookbook is fantastic!
I am an avid cook and was looking for something that had recipes I'm used to finding in the McAllen, Texas area. This cookbook does just that and then some. I discovered it after looking for a recipe for tortillas searching on Google. It came up with a recipe someone had listed that was from this cookbook. I tried the recipe and it was wonderful. So I searched again and found it on Amazon and purchased it. It is packed with everything you would ever want specializing on the dishes common in the border cities of California, Arizona, New Mexico and Texas. It has tons of recipes and each gives a complete run down on the recipes origin, a full description as well as any unique information related to the recipe. I can't rave enough about it and highly recommend it to anyone who loves to cook and loves Mexican food.

Tex-Mex Joy
This is great book if your looking go get to grips with Texas/Mexico crossover food style. The recipes are well written and thought out.I'm going to be doing a lot of cooking from this book.I was actually led to this book, via the white flour tortilla recipe. Very dangerous recipe, highly addictive.Recommended for classic Tex-Mex food.

This book is a treasure trove of recipes that bring together the tastes of Northern Mexico and the American Southwest - my vote for the world's finest fusion cuisine :-)
