WOW, great Parmesan!
I was a little worried by another reviewer who I believe just got the wrong cheese. This was THREE pounds of rindless Parmesan, which is a rarity where I shop. Sure they get the big parm wheels from some tiny village in Northern Italy, but a hunk of rindless is really hard to find.I believe it to be crime to cut off the rind and toss it in the trash, but that's what I do when I can't find a beauteous piece of rindless parmesan.What a sight it was opening this. 6-7 good size hunks of creamy parmesan. Seriously my heart leapt.Let me tell you I keep finding things on Amazon that make me shop in person less and less and less.I went shopping tonight, and all I got was three chicken thighs, two cases of my beloved sheep yogurt and I refilled a jar of almond butter. Oh, and I got some A2 yogurt that I wanted to try, if you know about A1 and A2. Been getting my shiitakes, broccoli, Brussels, Bacon and Cauliflower in bags from BJ's. If it wasn't for the sheep yogurt, I'd abandon my "fresh market".I will buy Parmesan from this seller on the regular. I like to slice it and eat it with roasted Brussels sprouts, or steamed broccoli. I have some older parmesan from my regular market that I grated. But I really prefer a 50 gram dish of sliced Parmesan. Goodbye Cheddar.If you want super tender, fresh and sticky dates or prunes, check out NUT CRAVINGS. Stay away from their nuts though. Not as good as other brands. But dates and prunes from them are bombe.We have a friend who visits us a few days each year, and when he's here, I cannot throw away shiitake stems, parmesan rinds or chicken backbones. "NO!" he'll cry. "Put that stuff in a bag and throw it in the freezer. You'll use it to make stock!"I told him, "How about I put all this in a bag and you can take it home and stick it in your freezer?" Man, I don't make stock, pasta sauce or soup anymore. I make plain simple food and I enjoy 50g of Parmesan now and again.

Wonderful taste
Wonderful taste.great for grating or as snack with crackers and salami.

It's best to re-package what you won't be using for a while in vacuum bags.
The packaging and shipping was superior and the cheese is excellent, very authentic. You're not paying for any hard rind so all you get is fresh and tasty cheese.

Well done , I’m impressed
I’m always using this type of cheese and felt it was a good value when I priced elsewhere. Was shipped in insulated containers, had a nice letter about the cheese , tips on storing it. Even though I just got this today I know it will be great tasting from all the effort to get to me. And last is they cut the cheese to order when they got my order. Nice

milder than usual
In the past I had ordered this no rind cheese but this time I noticed the cheese was milder in flavor than in the past. This probably means the cheese is younger. It would be helpful if the advertising would indicate the age of the cheese.

Not What Was Expected
Pretty sure this was not real Reggiano. It didn’t crumble when it was cut into cubes so we could grate it. It also had a lot of moisture in it. So, much so that, when grated and stored, the cheese started to clump together. There was so much moisture in the cheese that it started to mold in the storage container. In all the years we have been using Reggiano this has never happened before. We ended up throwing almost the entire purchase out. Very disappointed in this item.

As advertised...mostly
I've ordered this in the past, and as before, it arrived in two days in good shape with only a few large chunks, and it had no rind. See pictures for what I received. (To those who have complained about oily cheese...do what I do and only order it in late fall or early spring.)On hindsight, I almost wish one of the pieces had edge rind so I could determine/verify the origin of the cheese. While it does have the correct aroma/taste, it is not as intense as stravecchio-quality parmagiano reggiano, nor does it have the texture. I'd guess it was aged for 12-18 months. It may even be grana padano for all I know, but if so, it's high-quality grana padano.Having said this, the product is still a great value, and I will order it again next fall.
