Q: does this make a single or double shot?

It’s a double. I use it for my Delonghi Dedica and it appears to hold the same amount of coffee as the double filter that comes with the Delonghi.

Q: Can I use that with a espresso machine Gevi?

I don't know about the Gevi, if it's designed for a 51mm, 3 locking ear, it should. The unknown is the thickness of the ears with basket. If it feels tighter than your portafilter, you'll have to remove some metal from the top, won't be much, you could use a metal file and smooth it afterwards. You could also just buy the basket, that should fit your portafilter, they post the dimensions. Likely will have a flat top versus rounded
