Q: How well do they float in canola or vegetable oil?

I've only tried in olive oil, but they float fine if you get them loaded right. I can't speak specifically to canola or other oils, but I can make an assumption. :-)

Q: Do you need to use them in small openings? otherwise, it seems that might float to the side of the opening of the jar, candle holder, whatever.

I'm pretty sure I'm using them wrong. I have a menorah with cups that hold standard width candles (think tall dinner candles) so I tried it with oil instead. They float on the oil ok, but after a few minutes the oil ignites and I get 4 inch high flames. Its pretty but avoid drapes. So far they haven't tipped over, but maybe a small opening would be better.
