Still waiting for results but that is half the fun.

6 months without refrigeration
The mushrooms were fruiting while still in the bag. To my knowledge it usually takes 6 months for shiitake mushrooms to fruit. So I'm guessing that these have probably been left unrefrigerated for 6 months or more.
