Q: What's the shelf life?

I don't know but I am guessing it's long. I've had them for several months now just sitting on the counter top. They are drier and the flavor is milder but I still eat them. They seem to be fine...and so do I. :)

Q: Is this product processed with wheat flour that's present? Does it contain the wonderful antifongic molecules of living bacillus subtillus natto?

Hoshi natto is traditionally prepared using wheat flour, so my assumption (I can't read Japanese) is that yes, there is wheat flour in this product. Hoshi natto is processed at low temperatures which is said to preserve the bacteria.

Q: Is it suitable for vegans?

This product (nattoo) is (dried) fermented soybeans, which is just as suitable for vegans as sauerkraut (fermented cabbage).Dried nattoo beans do not have sauce or anything else so they remain vegan.
