Very sharp. Very pointy. Extremely flexible.
Accidentally stabbed myself in the finger with this knife and bled like a stuck pig. It’s a great knife and will cut pretty much anything you’re preparing for dinner. Just be careful

SUPER Sharp
I bought this as a gift and it did SUPER well. This seems VERY flimsy at first but it just makes it even better when using it. Comfort is a category but you really aren't looking to be comfortable when filleting fish but it fits well in the hand regardless. IT IS SHARP I cut my hand right out of the box but at least it works super well. Holds an edge great too!

An exceptional filet knife
This is the second Cooking Guild knife I've owned and they simply continue to impress.This 7" filet knife features all the appointments you'd expect from a premium-class kitchen instrument. The full tang blade is complimented by a handsome bolster that finishes with a well-formed rosewood handle set with three pins. A thick leather sheath with belt loop protects both the blade and the user while making the tool suitable for use in the kitchen or out in the wild. It is a true bushcraft blade through-and-through.Like my other Cooking Guild knife, this filet knife is razor sharp... I mean scary sharp! It has no problem slicing, filleting, or boning any type of meat you throw at it - just smooth, clean cuts all day long. Being a high carbon steel blade, I was concerned that it might be too stiff to be a great filet knife, but the masters at the Cooking Guild cracked that nut as the knife provides a tremendous about of flex without warping or distorting the blade. I just springs back ready for more.The knife has a good hand feel - comfortable and secure with no slippage. I particularly like that the weight is placed back in the handle giving you a tremendous amount of control over the blade. This is, undeniably, a professional-quality knife.If I had any complaint, I would have liked a slightly more pronounced bolster to create a slightly longer heel, but that's just my preference. The way the knife is balanced keeps the handle firmly planted in the hand so the streamlined design works perfectly well.Suffice to say, I highly recommend this knife - and the Cooking Guild knives in general. They are well crafted and perfect for anyone who takes their kitchen skills seriously.

Gorgeous and sharp
Caught a few fish lately. Decided to give this a test. Worked flawlessly. Blade came razor sharp out of the package and had no issue making short work of anything I put it to. 5/5

Love this Fillet Knife
Very impressed with this knife. Comes razor sharp out of the box, and is a work of art. While not technically it's intended purpose I have been using this for trimming my larger cuts of meats for smoking, like briskets. The thin and sharp blade makes quick work of silver skin. The blade is a very classic look and something I expect to let my kids inherit one day.

Very Disappointed!
I own The Cooking Guild Bushcraft Serbian Cleaver. It is by far the best large knife that I have! It is dangerously sharp and holds a great edge! However it is not the knife needed for boning and trimming. This was delivered last week and I used it once to trim a brisket. It is not sharp! I have whetstones, and cheapo kitchen sharpeners. Nothing will get this knife anywhere near the Cleaver's sharpness. I really want to love this knife, but at $100, it should be flawless and very sharp. More than that, I should be able to sharpen it! The blade has flaw in it that you can feel (see picture). This will be going back; BUMMER!
