I do not leave mine in the oven. I only use it to test the inner temperature of the meat. You must leave it in for a minute or two to allow the dial to register fully. When the needle is static, read the dial and if it reads rare and you want it well done, put your meat back in to the oven and test again later.

I can confirm that this would be ok to be dipped in liquids, however is not accurate enough for candy making.

last christmas i left mine in the oven all the time it was cooking and looked to see the indicator move to the correct cook. Had no problem turkey was great would certainly recommend this product.
