Q: Are rollers made of stainless stell or aluminium?

I gave it to my daughter, I think it was stainless, it’s made in China. I went to their website for a manual on how to use it it came without any directions. I bought a flaker made in Germany that attaches to my kitchenaid which I love.

Q: Can we make wheat flour

I have a different mill for making wheat flour and I also own this mill. Practically speaking, I would never use this mill to make wheat flour. I would not even try it. This mill is great for rolling oat groats into oat meal. I would never consider using it for milling wheat. You would most probably wind up breaking the mill. If you want to mill wheat, buy a different mill.
