Does it work on gravel

Didn't try - it has 3 metal spikes - maybe ok, but plastic central unit which I doubt would penetrate gravel.

Can you operate this with one hand?

I would say no. To operate you need two hands on the handle to push down, twist and pull up weed. Hope this helps.

can this remove weeds from paved gardens and in between paving stones?

no, it can't. it has four prongs so is too wide. In fact I don't find it great for pulling weeds out of soil properly either - it tends to leave the root behind and clog up with soil. It's disappointing.
