Q: Anyone using this frequently for at least a year, how "non-stick" is it? We use carbon steel but want to greatly decrease the oil in our cooking.

Mine started sticking after a week of daily use. Having to use more and more and more oil to keep stuff from sticking.

Q: Do these handles get too hot while cooking to touch without gloves or a potholder? I usually don't buy cookwear with metal handles for that reason

No ii went back and bought another one. i love mine!

Q: Is this 100% ceramic?

Caraway may be a better choice. I have come to regret this Green Pan purchase
