Q: how easily can this be broken down for storage, does it fold up on the bottom? If so, Apox how much space does it take up in storage, fit under a bed?

This easel can be broken down to lay flat easily. The two black knurled plastic knobs on either side can be loosened which allows the whole structure to fold down without needing to remove or dissemble anything. The smallest dimensions when down are 23"w x 56"l x 6.5"h. Hope this helps!

Q: What is the max weight this can handle?

I am not sure about the weight, but I have been working with 24 by 36 canvases, the easel handled very well. I just bought a few 36 by 48, but I have not tried yet.

Yes, the tray, upon which a canvas would rest, moves independently from the vertical support, which holds the top bracket. They each clamp separately to the frame of the easel. So you can leave the overall height fixed and adjust the lower tray up or down to accommodate canvas size.
